Spicy beans and Collards stew

Serves: 2 | Prep time: 5 mins | cook time: 20 minutes | Total time: 25 mins

Ingredients:
1 cup cooked beans (I used sprouted mung beans)
1 large carrot, peeled and chopped into small pieces
6 large collard leaves sliced
4 cups water
1 tsp cumin seeds
1-2 tbsp minced ginger
1 tbsp minced onion
1 tbsp curry powder
1 tsp turmeric powder
Healthy pinch of salt
2 tbsp fullfat coconut milk

Method:

  1. In a nonstick pot over medium heat, add minced garlic, onion and all the spices and sautéed for 5 minutes. stir frequently.
  2. Add carrots and sauté for 2 more minutes
  3. Add beans and let it cook for 5-10 minutes
  4. Add in the coconut milk and stir very well(optional)
  5. Add in the collards, cover the pot and let it cook for 1 minute. Remove from heat and serve over rice
