- 1/4 cup pine nuts
- 1.5 cups of basil tightly packed
- 1 cloves of garlic
- 2 tbsp nutritional yeast
- 1/2 medium avocado
- 5 tbsp water
- 2 tbsp lemon juice
- FOR THE ZOODLES: 4 medium zucchini, ends trimmed
- Using a spiralizer, slice the zucchini into noodles. Set aside.
- Simply place all the pesto ingredients in a food processor and blend until it’s smooth!
- Combine the zucchini noodles and pesto. Toss until zucchini noodles are well coated.
- Top with more pine nuts(optional) for some crunch.
